Our deliciously tasty pulled pork recipe is sure to satisfy even the fussiest of eaters! A super verstalise dish that can be used in a number of different meals and if you're a lover of Mexican food - this one's for you!
Ingredients
1.5kg Harris Farms pork shoulder
Can have bone in or out but skin on
1 ½ tsp salt
½ tsp chilli flakes
2 tsp ground fennel
4 garlic cloves
2 tbsp cooking oil

Preheat the oven to 160°C

Combine salt, chilli flakes, ground fennel with garlic and two tablespoons of cooking oil. Blitz to a paste.

Smear paste all over the skin and flesh of the pork shoulder. Place pork into a roasting dish with high sides. Add one litre of chicken stock or water around the pork in the roasting dish.

Cover first with baking paper then aluminum foil and seal the edges tightly. Place pork in the oven and cook for 3-3.5 hours, until tender.

Remove from the oven and allow to rest for 20 minutes before discarding foil, skin, bone (if using pork with bone in) and excess fat. Pull pork with two forks soaking up all the juices in the roasting dish. Pulled pork can then be used in slider buns with slaw or in your favorite Mexican dish such as quesadillas, tacos, tortillas or nachoes!
