Ingredients
Mixture
500g Harris Farms prime beef mince
1 tsp each onion powder, oregano, salt
2 tsp each cumin powder, paprika
1 Tbsp olive oil
2 garlic cloves, minced
1/2 onion, finely chopped
2 Tbsp tomato paste
1/4 Cup water
1/2 Cup corn kernels
1/2 Cup black beans
6-8 flour tortillas
2 Cups grated cheese
Coriander, avocado, hot sauce and sour cream to serve
Instructions

Mix the herbs and spices in a small bowl and set aside.

Heat the oil in a pan over a high heat. Add the onion and garlic, cook for 2 minutes.

Add beef mince and cook until brown

Once the mince is browned, add tomato paste, water and spices. Cook for 2 minutes. Transfer to bowl to cool.

Place the tortillas on chopping board. Spoon two spoonfuls of the mixture onto half of each tortilla and top with cheese. Fold in half.

Preheat non stick pan over medium-low heat.

Place quesadilla in the pan, press down lightly and cover with lid. Cook for 3 minutes or until golden brown and crispy.

Carefully flip over the folded edge. Cook for 3 minutes until crispy.

Cut in half and serve with coriander, sour cream, avocado and hot sauce.
